\nThe fan, positioned in the rear wall of the oven, allows you to suck out the vapours produced by food, eliminating any type of moisture from the cooking chamber. At the same time, the heat that comes directly from the combustion chamber to the base of the cooking chamber makes a mandatory rotating path thanks to the force exerted by the fan.
\nThis pushes the heat from the back of the oven to the front, which vents at this point from small holes positioned at the front: this not only allows perfectly homogeneous cooking but avoids the sudden escape of heat when the oven is opened, creating an air barrier.
