Professional refractory stone

Designed and built with a pure “refractory stone” cooking surface, it makes the most of its most important feature, that of releasing heat evenly, absorbing the moisture of the dough during cooking, thus obtaining the result of cooking a fragrant and crispy pizza, homemade with the same method of cooking on stone as the “wood-fired” oven of the most renowned pizzerias.

Crosti has a food-grade refractory surface for “contact” cooking as in professional ovens.

The 13 mm refractory stone helps to maintain heat and is constantly kept at temperature by the lower heating element of the oven and releases heat very slowly avoiding immediate heat loss.

Ventilation system

The external dome is made of carbon steel, a material which, combined with ceramic fiber insulation, is enriched by a ventilation system for external cooling of the oven. The ventilation system is designed to improve the performance of the oven and to ensure proper ventilation and heat dissipation.
